We like to use real chunks of chocolate for this recipe
to give it a real chunky taste
although you can use a packet of choccy chips.
Ingredients:
2 cups self-raising flour
3/4 cups caster sugar
125 gms butter melted
250 gms choc bits or a bar of milk chocolate
2 eggs well beaten
1 tsp vanilla essence
1 tbs milk
Method:
1. Preheat your oven to 180C.
2. Take two medium sized baking trays and grease them lightly with butter.
3. Break up your chocolate into small pieces by bashing lightly with a rolling pin.
4.Mix your flour, and sugar together in a large bowl and add in your chocolate chips, then make a deep well in the centre
5. Now add into the well the butter, eggs and vanilla. Stir it all gently together. Add milk if mixture is dry.
6 Using a large spoon and a spatula drop a golf ball sized amount of the mixture onto the trays but allow room for them to spread as they rise.
7. Place in the oven and bake for approximately 12 minutes until golden and firm to touch.
8. Remove carefully from the oven and leave to stand for 5 minutes, then place on cooling rack.
Any sort of melon works with this recipe and you can also use more than one sort. Use fresh ripe kiwis and soft fruits like strawberries, raspberries and blue berries.
Ingredients:
4 slices of Parma ham ( 1 slice per person ).
Olive oil, lemon juice and honey makes this light dressing. Mix it to your taste. As a guide it is 4 parts Olive oil to 1 part Lemon juice and 1 part honey.
Method:
1. Sort out which fruit you are going to use, and cut into bite sized pieces. You may need some help with the melon, so it is best to ask an adult and observe how they handle it, so that you can cut a melon safely in future.
2. Arrange your fruit on a plate or a bowl. Try and give the fruit some height.
3. Parma ham is very thin and needs to be handled carefully. You can drape a whole slice over your fruit or cut the Parma ham into pieces and artistically place it on the fruit.
4. Drizzle the dressing from a height over the fruit and ham. The dish should look fresh and colourful with a lovely gaze.
5. This should take no more than 15 minutes to make and serve 4 people.
It is easier to get all your cutting of onions and herbs done before you start so that you can just add them to the mixture.
Ingredients:
2 cups self-raising flour
1/2 tsp salt
1/4 cayenne pepper optional
3 tbs parsley chopped
1 onion small chopped
1 cup tasty cheese grated
3 bacon rashers diced
1 large egg
1 cup of milk
Method:
1. Pre-heat your oven to 200C
2. Sift your flour into mixing bowl.
Add in the salt, cayenne pepper, parsley, onion, cheese and bacon to mixing bowl and mix together.
3. Add in the egg and milk. Mix lightly until flour has been combined. Do not over mix.
4.Place mixture evenly into a lightly greased muffin tin and bake for 15 to 20 minutes.
5.Remove carefully from the oven and leave to stand for 5 minutes, then place on cooling rack.
Kiwi Fruit Punch is a rich fresh fruit juice of kiwi. Juicy kiwifruit can be mixed with any other fresh fruit to make a healthy and refreshing drink. This recipe uses fresh and ripe kiwis and apple, however, you can replace apple with any other fruit of your choice.
Ingredients:
3 Kiwifruits, peeled and cut in slices
2 Apples, cored, peeled and sliced
10 Ice Cubes
2 Kiwi Slices, and fresh mint for garnishing
Method:
1. Place allof the ingredients into a large blender along with the ice cubes and blend away until allcubes and fruit have broken down into small pieces.
2. Pour slowly into a tall glass with a straw and add kiwi slices and mint on top to garnish.
Tips and Variations:
Choose a ripe kiwi by pressing it a bit and check whether it is soft or not. Do not choose ones which are too hard or too soft.
Replace apples with 1 cup of fresh strawberries or raspberries for a tangy exciting flavour.
